I watched the first episode with the Disney Plus free trial.
It was entertaining, felt like Star Wars.... the action scenes were cool, but the plot needs help. I feel like as a Star Wars fan, I'm so desperate for a good Star Wars series that I am almost willing to overlook some things that really bug me...so,
I do have a couple of complaints which I will mention below, so SPOILER ALERT!!!!!!!!!!!!!

Okay.....
The "BIG JOB" that the Mandalorian takes is to kill of capture a 50 year old target. When he acquires it, it's a baby Yoda....well someone who is the same species as Yoda, as this story takes place after ROTJ. My only problem with this, is Yoda should not be a baby for 50 years! Just because he lives super long does not mean he was a baby forever. It's ridiculous and stupid IMHO, and ruins the show in the very first episode. Everything else was okay.
Well, not totally okay...
The Mandalorian takes basically a brick of lead for payment and takes it to his clan where they melt it down into one piece of new shoulder armor. I get that it's the best piece of armor, but that's his thing...he kills a lot of people...for a piece of armor. I'm not impressed. Maybe by the end of the series he will have a full set of chrome armor.

Hmmm. I thought it was entertaining. Basic bound hunter stuff, but we shall see where it goes. Hopefully the plot will get deeper as it goes.
Disney + has a lot of old Marvel toons, btw, so I'm happy. Not happy with censoring old movies, though.

Actually, I may have been mistaken about that. There was talk they'd censor old movies of theirs. Disney has put disclaimer about "outdated cultural depictions" for animated classics such as Dumbo, Peter Pan, The Lady and the Tramp.

I really liked the Jawas and the Sand Crawler. They made the Sand Crawler cool again, and Jawas are just fun.
I didn't like how he killed the Reek Beast, I seriously doubt a knife that size would penetrate the hide very easily, let alone kill him quickly.
More opportunity to show how weak and pathetic his average armor is, it's constantly breaking and falling apart. This is why a true Mandalorian only wears chrome. Seriously, kind of a lame plot IMHO. Lots of things I like about this show though.
The helmet looks cool, but I keep wondering how he is ever going to eat in front of someone...I guess if he orders a drink he can stick a straw under his helmet. I'll give the prequels some credit here, I like that Lucas wasn't afraid to unmask Jango Fett, and even used it as part of the story.
Baby Yoda is acting more like a small child at times...I like the idea of a Young child Yoda, but with 50 years of experience...he should be more developed, I'm sorry thing really bugs me, it probably shouldn't, but it does. Oh well.

The one line I really liked, "weapons are apart of my religion." Also, seeing how fortified the Jawas Sand Crawler is was cool.

That was a good line. Then he sets his rifle down almost right away lol!
I loved all the little windows in the sand crawler :-)

New episode is up for Chapter 6. Bill Burr is in this one It cracks me up so bad to see him in Star Wars, I love his stand up...this is great :-)

Chapter 7 is up...
The story is cool, whatever...the only thing I really want to point out is they show a TIE-Fighter actually land!!! I think this is the first time ever. I don't really like how they did it, with the folding wings, but it's okay I guess. I prefer the idea that the wings are strong enough to land on by themselves. It would be a long drop for the pilot to hop out from the hatch though. I could see a ladder sort of transforming from the arm that holds the wing. I always wished that Vader didn't use the Imperial Shuttle for personal transportation and instead used his TIE-Advanced. I feel like the shuttle is more for the Emperor...but then the Rebels use one to infiltrate Endor, so whatever. I used to have the toy for that shuttle...the thing is huge.
Spoiler ahead.....
They leave quite a cliff hanger for Chapter 8...I think it's obvious that IG-11 is going to be the one to save the day and end up being a co-pilot for Mando.

Man, Kuiil… ugh, he was great, he had his code, he had his beliefs, he stood by them at all times.
This feels sort of like Rogue One, you have the bureaucratic idiot, but then the real threat behind him.
The Death Troopers from Rogue One! The real villain! Empire propaganda of how good things were when they were in charge.
Hmmm... classic tv/movie trope, have to go back to where it all began.

It does feel like Rogue One, which is why I'm liking it. Kuiil's purpose is to live on in IG-11.
IG-11 being reprogrammed will start to have personality like the droid K-2SO in Rogue One.
We also haven't seen ROTJ Biker Scouts since ROTJ...there were some similar ones in ROTS, but those were technically clones. These are real Biker Scouts. Their helmets would make it really hard for them to see, it's not a practical design, but they look really cool.
